Nicole's Tip:  She loves using the charcoal maze to strategically place her wood chunks.  As the fire goes thru the maze she can force certain wood species to burn first.  Maybe hit the meat with hickory then peach!  Or move two sections of the maze together to divide off the firebox when only half a load of charcoal is needed for those short cooks.
