Place two to three handfuls of wood chips in a bowl and cover with water, wine, beer, fruit juice or other flavored liquid.
Soak the wood chips in liquid for at least 30 minutes. Drain, and place wet chips in the smoker box.
If using charcoal, place the smoker box directly on the hot coals. If using a gas or electric grill, place the smoker box below the grill grate, directly on the heat source. Cook food as usual. As the wet chips heat, they will begin to smoke, giving your grilled food a rich, aromatic and smoky flavor.
