Smoked Stuffed Pumkin on a Hot Box

This cozy fall dish takes comfort food to a whole new level! Sweet sugar pumpkins are hollowed out and filled with a creamy mix of sausage, veggies, apples, and cheese — then gently smoked in a Humphrey’s Hot Box to infuse every bite with rich, savory flavor. The light kiss of smoke blends beautifully with the sweetness of pumpkin and apple, making it the perfect mix of hearty, creamy, and autumn-inspired. Serve it scooped over rice or grains with a little roasted pumpkin on the side — it’s the kind of meal that feels like a warm hug on a crisp New England day.

Ingredients
1 pound regular pork sausage roll like Jimmy Dean sausage roll
1 large onion, chopped
4 garlic cloves, minced
1 head of broccoli, chopped
2 large carrots, chopped
1 large apple, diced Any variety of apple will work ok, but I recommend Honeycrisp, Cosmic Crisp or Granny Smith.
8 oz cream cheese, softened

1 cup shredded cheddar cheese
¼ cup Parmesan cheese
salt and pepper
dash of pumpkin pie spice
1 cup of Craisins
1-2 pie or sugar pumpkins I usually need 2 small sugar pumpkins for this recipe.

1. Preheat your smoker to 300°F

2. In a large saute pan or skillet, brown the sausage until no pink remains. Add in the garlic, onions, broccoli, and carrots. Saute until veggies are soft, about 5-7 mins. I did this the night before and put it into the refrigerator.

3. Add the Craisins, cream cheese (chopped into smaller pieces), parmesan, and cheddar cheese.

4. Set into the smoker for 25 mins or until the chesses start to melt.

5. Next, wash your pumpkin and cut the top off. Remove the seeds and stringy bits. Season the inside with salt, pepper, and just a bit of pumpkin pie spice.

6. Remove the cheese, veg and meat mixture from the smoker and stir in the Apples (optional pecans) and Jivin Hive.

7. Stuff the Pumpkins

8. Place the Pumpkins into the smoker for 1 hour. Check it, and then cook for 30min - 1 hr until the pumpkins are fork tender and a beautiful burnt orange color.

9. Carefully remove the pumpkins from the smoker.

10. Scoop out the filling and the roasted pumpkin meat and serve over rice.
