  1. Preheat your smoker to 275°F (135°C) and prepare it for indirect cooking with pecan and cherry wood chips.
  2. Score the St. Louis ribs down the back side and generously season them with Humphrey's Sap Sucker and Jivin' Hive.
  3. Place the seasoned ribs on the smoker, uncovered, and smoke them until they are tender and cooked through.
  4. Once done, remove the ribs from the smoker and carefully remove the bones. Cut the rib meat into 1/4 slab pieces.
