I'm delighted to present to you a taste of summer with my latest creation: Grilled Chicken and Pineapple Coconut Rice Bowls, featuring the irresistible flavor of Humphrey's Twice Spice. Picture this – tender grilled chicken, seasoned to perfection with Humphrey's signature blend, paired with fragrant coconut rice infused with sweet grilled pineapple rings. For the Grilled Chicken:

  • 4 boneless, skinless chicken breasts  (substitue with shrimp)
  • 2 tablespoons Humphrey's Twice Spice rub
  • Salt and pepper to taste
  • Olive oil for brushing

For the Pineapple Coconut Rice:

  • 2 cups jasmine rice
  • 1 (13.5 oz) can coconut milk
  • 1 cup water
  • 1 cup diced pineapple
  • Salt to taste

For Assembly:

  • Grilled pineapple slices
  • Sliced avocado
  • Grilled sliced red and green peppers
  • Chopped cilantro for garnish
  • Lime wedges for serving


  1. Preheat your grill to medium-high heat.

  2. Season the chicken breasts with Humphrey's Twice Spice rub, salt, and pepper on both sides. Drizzle with olive oil and rub the spices into the chicken.
