Lewiston Lobster Roll

What a treat tonight!   We made a twist on the Lewiston Lobster Roll.  What is a Lewiston Lobster Roll, you might ask.  Around these parts of Maine it refers to a Hot Dog!  Our twist was the lobster!  Yup, I said it......Lobster topped hot dogs!   Here's how we made them.

First we started with (2) Maine Live 1-1/4 pound lobsters.  To save the time you can buy just just the lobster meat already shelled.  If you prefer to cook them yourselves, but need guidance, use this easy How-To guide.  I like to use the claws and knuckles.  I feel this makes the best lobster rolls.  

How to make the lobster dressing:

1/2 cup of Mayonnaise, 1/8 teaspoon cayenne pepper, 1 teaspoon freshly squeezed lemon juice, 1/4 teaspoon of Todd's Dirt, Chesapeake Bay (Old Bay can be substituted), 1/4 teaspoon chopped chives, 1/4 teaspoon finely shopped fresh parsley

Mix the Mayo Mixture with the lobster meat and set it into the fridge until ready to use.  

The second main ingredient in this recipe is Snake River Farms American Wagyu Beef Frankfurters (aka Hot Dogs).  

Preheat grill (charcoal grill is preferred)

Grill Dogs, be sure to rotate them as they cook to prevent the skin from splitting.  The internal temp should reach 165.

These hot dogs are excellent in a bun with ketchup and mustard, but tonight we are going to top them with lobster salad!  YUM!

Melt butter and use a silicone to brush on buns and lightly grill

Now the assembly:
