1 loaf day-old French bread or brioche (about 14–16 ounces), cut into 1½-inch cubes

2 cups whole milk

1 cup heavy whipping cream

⅓ cup packed brown sugar

2 tablespoons Hilltop Boilers Cinnamon Maple Sugar, divided

¼ teaspoon salt

Maple mascarpone cream

8 ounces mascarpone, softened slightly

1 cup cold heavy whipping cream

¼ cup powdered sugar

3 tablespoons Hilltop Boilers Dark Maple Syrup, plus more to serve if desired

Pinch of salt
Instructions

Prepare the dish. Grease a 9-by-13-inch baking dish. Add the bread cubes in an even layer.

Make the custard. Whisk the eggs, milk, cream, brown sugar, vanilla, 1 tablespoon of Cinnamon Maple Sugar, and salt until combined. Pour evenly over the bread. Press the bread down gently so the top pieces absorb some custard. Sprinkle with the remaining tablespoon of Cinnamon Maple Sugar.

Chill overnight. Cover and refrigerate for at least 8 hours and up to 18 hours.

Bake. The next morning, heat the oven to 350°F. Remove the dish from the refrigerator while the oven heats. Bake uncovered for 45–55 minutes, until puffed and golden and the center is set rather than wet. If the top browns too quickly, tent it loosely with foil. Let rest for 10 minutes before serving.

Whip the topping. Beat the mascarpone, powdered sugar, maple syrup, and salt until smooth. In a separate bowl, whip the cold cream to medium-stiff peaks. Fold the whipped cream into the mascarpone mixture until smooth and fluffy. Keep chilled until serving.

Serve. Spoon the maple mascarpone cream over warm portions of French toast bake. Add a light drizzle of Dark Maple Syrup or another pinch of Cinnamon Maple Sugar if you'd like.
Make-ahead tip: The cream can be made the night before and stored covered in the refrigerator. Give it a quick stir before serving. Refrigerate leftovers promptly and enjoy within 3 days.
Set it in the middle of the table with the maple mascarpone cream and let everyone help themselves. That's my kind of morning!
