Scott Walkup's Famous Alligator Dip

Scott Walkup is a new Humphrey's Smoker Users.  I am so glad he joined our Facebook Users Group and bragged about his alligator dip!  It's so inspiring to me.  Being from Maine, Alligator isn't something we have readily available.   I will definitely be mail ordering some for this recipe!  

 

Preheat smoker to 250°F.  Have a few hickory chunks ready to set on lit charcoal when you put the meat on the smoker.  

Place Alligator meat in the top third of your smoker and add the wood chunks to the charcoal. Keep it in the smoke bath for about 3 hours. 

For the spread: 1 pound of smoked gator with 1 pound of cream cheese, 1/4 cup of white cheddar, and some Paul Prudhomme Seafood Magic seasoning blend. Mixed with a hand mixer.

Top with chopped green scallions or chives.  Enjoy with some sesame crackers!

Prudhomme's Seafood Seasoning (Copycat Recipe)

Ingredients:

  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground cayenne
  • 1/4 tsp black pepper
  • 1/4 tsp ground coriander
  • 3/4 tsp leaf oregano
  • 3/4 tsp leaf basil
  • 3/4 tsp leaf thyme
