The 12" x 12" double-sided plastic board with ribbing holds the meat in place. Flip the board to choose between cut depths of ¼" and ⅛" (6.4mm & 3.8mm). The Pressing Plate with handle lets you apply even pressure while keeping hands safely away from the knife. The Jerky Knife features a 10" stainless steel blade, and the Non-skid Grip Mat keeps the board securely in place.
